Purchase shaft and have a machine shop cut a key-way slot in the shafts. You need two shafts. One shaft is used for the contact wheel and one shaft for a step down pulley. Theses pulleys can be bought at most good hardware stores. This gives you three speeds. More hassle and money but a great addition for the belt grinder.

Your options for speed change at that point is mostly limited to using step pulleys and moving the v-belt over to slow down or speed up the grinder. If you were planning to go with a VFD, you would want to pick up a 3 phase motor and just have 2 pulleys the same size since it doesn't really matter.
